Welcome to Tess's kitchen and come alongand join us for the first grilling of
the season.
It's a beautiful day out there today. Imade a visit to our market today to get
some fish. The fish comes in fresh everyThursday. The fishmonger goes to a port
near Philly and is there every Thursdayat four am waiting for the boats to come
in with fresh fish.
As you can see, He has a very goodselection.
All those baby snappers look good. Thiswas an interesting fish, those little
round ones there. I think they are called pampanos.
But while i was there they were verypopular. About 10 of them sold.
The fishmonger said they have little if nobones.
I did get some fresh tuna, red snapperand grouper bones for some fish stock.
And these little things look interesting,they are salmon bellies at $2.99 per pound.
I thought that was pretty reasonable. Healso sells fresh shrimp, scallops...
and lobster.
I decided to get some mako shark andhad him cut 1-inch pieces.
I'm not an avid griller and barbecuerlike some, but i do enjoy cooking
outdoors.
I rinsed the shark under cold water anddamping dry. Seasoning with some sea salt..
and fresh ground pepper, drizzle of oliveoil and rubbing in well.
I could put these directly on the grill..
but today I'm using some foiledseason packets.
First I'm laying down a bit of lemonslices.
This is going to provide flavor andprevent the steaks from burning.
Adding some red bell pepper, whitescallion, chopped fresh chives, parsley, a
little chopped jalapeno for some heat,slices of ginger and some dab of butter.
Giving them a good wrap in the aluminumfoil and they're ready for the grill!
I could put these directly on the grill.I decided to make some boiled season
packets.
Earlier I had mango salsa to go withMako shark...
and I'm going to use the mango salsa intwo ways.
I'm going to use it as a garnish for themako shark and also going to stuff some
jalapeno peppers.
And please stay tuned for the future for the recipe video of the mango salsa.
Just getting all the prep work done,rinsing and seeding my jalapenos.
Getting them ready for some mango salsaand I'm dedicating these jalapenos
to Keith.
He loves jalapenos. I'm putting the stuff
mango salsa jalapenos a in a foil pan andonce they become tender on the grill..
I'll top with some cheese.
We're also going to have some grilledpotatoes and I
microwaved them for five minutes and I'msplitting in half.
Seasoning with some salt, pepper and adrizzle of olive oil.
Ok, everything's on the grill and cooking!
Being one inch thick it took about 10minutes for the shark steaks to cook.
The stuffed jalapeno peppers are cookinggood and the potatoes are browning
nicely.
I'm moving them to the top rack.
There's nothing like grilled potatoes.
Putting a mixture of some Cooper andcheddar cheese on top of my mango salsa
stuffed jalapenos. Letting them cook foranother 5 minutes until the cheese melts.
Oh! they look good!
Gotta love that jalapeno heat! I'm withyou on that one Keith.
And dinner is ready! Seasoned mako sharkwith some grilled mango salsa stuffed
jalapenos and some grill crusty potatoes.
The mako shark was a good deal at $3.99per pound.
It was absolutely delicious!
The meat was nice and moist andflavorful.
